This is more of an idea than a recipe, but WOW is it good! I am a huge fan of anything “cookie monster” flavored, and I had these ice cream to-go cups, so I made a few end of school treats. I started with a layer of crushed cookies. Personally, I love to use Betty Crocker cookie mix and make it as directed and bake it in a 9″ pan. I find that the cookies are the perfect consistency for ice cream. I added Cookie Monster ice cream from Kelly’s Homemade Ice Cream, but they also have a similar flavor at Target called Sea Monster. I topped them with a Magic Shell and chocolate sprinkles. I am adding all of the links below!
Prepare and bake the chocolate chip cookies according to the package instructions. Let the cookies cool completely. Alternatively, press all of the dough into a greased 9″ square dish and just crumble it apart when you’re ready to use it.
Place the ice cream cups on a flat surface. Crumble a layer of cookies at the bottom of a dish. Top with Cookie Monster ice cream. Drizzle magic shell on top and then immediately at the chocolate sprinkles.
Hand out right away or freeze until you’re ready to eat them!
