I’ve made so many versions of stuffed brownies over the years, and every time I think, this one’s the winner. These S’mOreo Brownies are definitely up there.
Starting with a box of brownie mix saves so much time, which is a must during busy summer days. I love adding Oreos into the middle of brownies, but these are even more fun because the S’mOreos add a little mix of chocolate, marshmallow, and graham cracker flavor.
A few years ago, I made Snoop Dogg’s brownies where he added a layer of chocolate chips on top — and I’ve been doing it ever since. After baking, I top them with mini marshmallows while the brownies are still slightly underbaked (or just baked enough). The marshmallows melt into a gooey layer that’s to die for.
You can stick them under the broiler if you want a toasted top, but I usually skip it — they stay softer and easier to eat over the next few days this way.

S’mOreo Brownies
Ingredients
- 1 box brownie mix (plus ingredients listed on the box)
- 16 S’mOreos (Oreo’s limited-edition s’mores flavor)
- 1 cup milk chocolate chips
- 1 ½ cups mini marshmallows
Instructions
- Preheat your oven to 350°F. Line a 9-inch baking dish with parchment paper and lightly coat it with baking spray.
- In a large bowl, mix together the brownie mix and the ingredients called for on the box.
- Spread half of the brownie batter into the prepared pan.
- Arrange the S’mOreos over the batter in a 4×4 grid.
- Carefully spread the remaining brownie batter over the cookies.
- Sprinkle the milk chocolate chips evenly over the top.
- Bake according to the brownie box directions, using the shortest time listed.
- Pull the brownies out, sprinkle the mini marshmallows over the top, and return to the oven for another 3–5 minutes, until the marshmallows are soft and melty.
- Let the brownies cool completely before slicing. (You can pop the pan in the fridge to speed things up—just bring them back to room temp before serving!)
