Confession time: I’m not a fan of hot desserts. While I do love something with a hot-and-cold mix, like a brownie sundae or a cookie skillet topped with ice cream, molten cakes are a hard pass for me. The same goes for traditional s’mores—I’m just not into the melted chocolate. That’s why this twist on s’mores is just perfect for me. It has all the classic components—graham crackers, marshmallows, and chocolate- but the marshmallows stay fluffy instead of melting, the Nutella gives a hint of that milk chocolate flavor, and the white chocolate creates the perfect shell.
I worked in a chocolate factory for 13 years, so I feel right at home when working with chocolate. For the easiest option at home, I recommend Ghirardelli melts. If you want to add color, make sure to use oil-based food coloring—regular food coloring will cause the chocolate to seize and become lumpy. My coloring of choice is Colour Mill or Chefmaster Candy Color. To give these s’mores a Valentine’s theme, I used a darker, almost red drizzle by adding extra coloring to leftover pink chocolate. I think conversation hearts are so fun for valentines day so I added those, but people will probably pick them off anyways. Not sure people really eat them lol. Definitely use your candy or decoration of choice.
And these are super fun to make with kids. My 10-year-old daughter, Hayley, had the best time helping with these. She’s at that age where she wants to learn and be creative and get involved in the process. I dipped the s’mores and set them on parchment, but she took over with the decorating part—which most people like the best! While regular marshmallows work fine, using the s’mores (flatter) marshmallows makes it much easier! If you use regular, just cut them in half and place them side by side.
