Every weekend, I meal prep as much as possible. I have a tendency to over-plan AND over estimate how much I can get done in a day. I made this spicy chicken salad last week, and I was so happy that my lunches were just ready to grab. Paired it with some spicy pickles and chips, such a breeze!
Mix the first 7 ingredients in a bowl. I like to let it sit overnight to get cold and for the flavors to combine. If I’m meal-prepping it, then I just add it to the containers.
I found these new Dave’s Killer Bread Rolls which were delicious. I added cheese and a generous scoop of the salad to each.
Serve them with your favorite spicy chips and pickles, if desired.
