Spicy Chicken Salad

Every weekend, I meal prep as much as possible. I have a tendency to over-plan AND over estimate how much I can get done in a day. I made this spicy chicken salad last week, and I was so happy that my lunches were just ready to grab. Paired it with some spicy pickles and chips, such a breeze!
Spicy Chicken Salad
Ingredients

- 2 cans chicken breast (I used Swanson)
- 1 tbsp diced Jalapeño
- 1 tbsp pickles, chopped (I used hot pickles)
- 1 tbsp diced red onion
- 1/4 tsp salt
- 1/4 tsp pepper
- 5 tbsp mayo or lite mayo
- Dave’s Killer Bread Rock ‘n’ Rolls (slider bread)
- Sliced pepper jack cheese, if desired
Instructions
- Mix the first 7 ingredients in a bowl. I like to let it sit overnight to get cold and for the flavors to combine. If I’m meal-prepping it, then I just add it to the containers.
- I found these new Dave’s Killer Bread Rolls which were delicious. I added cheese and a generous scoop of the salad to each.
- Serve them with your favorite spicy chips and pickles, if desired.
