As summer comes to an end, I’m finishing with a few ice cream recipes. This is a Frozen Strawberry Shortcake and you will absolutely LOVE it. I made it using a BlendJet in the prettiest rose gold color. If you like to make smaller servings, you’ll be obsessed with these.
The ice cream base is mixed until it’s super creamy, similar to the consistency of a Frosty. I mixed in homemade buttery crumble that gives it that strawberry shortcake flavor. It’s topped with strawberry whipped cream, a Golden Oreo, and a dipped strawberry. Added note, Barbie would flip for this 😉
White Ghirardelli melts + pink candy color OR use pink candy melts.

Instructions
In a small bowl, combine the flour and brown sugar. Cut in the butter until the mixture is crumbly. Spread on a rimmed baking sheet and bake for 10 minutes or until lightly golden brown and let cool completely.
Meanwhile, melt the white chocolate in 30 second increments, stirring each time. Once melted, add a few drops of pink candy color. Dip each strawberry into the chocolate and move to a parchment lined cookie sheet to set.
Fill the BlendJet approximately 3/4 full with strawberry ice cream. Do not press the ice cream all the way to the bottom. Blend the ice cream until it’s super creamy.
One mixed, stir in 2-3 tbsp of the crunch.
Top with strawberry whipped cream, an Oreo, and a dipped strawberry.
