Frozen Strawberry Shortcake

  • Strawberry ice cream
  • 1/2 c all purpose flour
  • 1/4 c packed brown sugar
  • 1/4 c cold butter, cubed
  • Strawberry whipped cream
  • Fresh strawberries
  • White Ghirardelli melts + pink candy color OR use pink candy melts.
  • Golden Oreos
  • BlendJet blender


  1. In a small bowl, combine the flour and brown sugar. Cut in the butter until the mixture is crumbly. Spread on a rimmed baking sheet and bake for 10 minutes or until lightly golden brown and let cool completely. 
  2. Meanwhile, melt the white chocolate in 30 second increments, stirring each time. Once melted, add a few drops of pink candy color. Dip each strawberry into the chocolate and move to a parchment lined cookie sheet to set. 
  3. Fill the BlendJet approximately 3/4 full with strawberry ice cream. Do not press the ice cream all the way to the bottom. Blend the ice cream until it’s super creamy. 
  4. One mixed, stir in 2-3 tbsp of the crunch. 
  5. Top with strawberry whipped cream, an Oreo, and a dipped strawberry.
