I’m all about easy desserts, and these Deep Dish Cookies for One are everything. It’s cookie dough, Nutella, more cookie dough—baked into a personal-sized treat. I had to sprinkle a little sea salt on top because I am the ultimate salty-sweet fan. If you’re in the mood for something simple and chocolatey, grab a spoon, turn on your favorite show, and let this cookie make your night even better!

I first discovered Eat Pastry cookie dough at Target, and their super creative flavor, “Maple Brown Butter,” immediately caught my eye. I couldn’t resist trying it (I love anything limited edition). I used it to make Elf-themed cookies for the holidays, and they were a total hit. After that, I had to try their other flavors, and I started with classic chocolate chip. Scrolling through their social media, I spotted a dessert idea similar to the “deep dish cookie for one,” and let’s just say, I couldn’t taste test it fast enough. I really love that their cookie dough is edible straight out of the tub or baked, so you can snack and bake at the same time. Yes, we did this lol.
To make this version, I layered some of their chocolate chip cookie dough in a small dish, added a big scoop of Nutella, and topped it off with more cookie dough. Before baking, I sprinkled a little sea salt on top because salty-sweet cookies are my favorite thing on the planet. I baked them for about 20 minutes, just until the tops were golden but still slightly gooey inside—the ultimate texture imo. For an extra chocolatey (and themed) upgrade, I topped each warm cookie with Ghirardelli’s new Lava Cake Chocolates, which are dark chocolate hearts filled with chocolate caramel. When they start to melt omg…just try resisting them.
I made one for me and my daughter, turned on the new Nate Bargatze special on Netflix (he’s my all-time favorite comedian), and just relaxed after a super busy holiday season. It was the perfect way to kick off 2025—a little comedy and a little chocolate. What’s more fun than that? 😉
Absolutely! While Eat Pastry Chocolate Chip Cookie Dough (Eat Pastry Dough) is my favorite for this recipe, you can use any store-bought or homemade cookie dough you love. Just make sure it’s safe to eat raw if you’re planning to sneak a taste before baking.
No worries! You can use any small, oven-safe dish you have on hand, like ramekins, small pie tins, or disposable round pans (check out these pans I used). Just adjust the baking time slightly if your dish is deeper or shallower.
It’s totally up to you! A heaping spoonful (about 1–2 tablespoons) usually works perfectly for a gooey center, but feel free to add more if you’re a Nutella fan.
You can, but the sprinkle of sea salt really balances the sweetness and adds that irresistible salty-sweet combo. I highly recommend giving it a try! Find the sea salt I used here.
No problem! Any chocolate piece that melts easily works great. Try a square of dark chocolate, a truffle, or even a caramel-filled candy for a fun twist.
These cookies are best enjoyed fresh out of the oven while they’re warm and gooey. If you want to prep ahead, assemble the cookie layers in your dish, cover, and refrigerate. Bake them just before serving.
Bake until the cookie is golden brown and the edges are crisp. The center should still be slightly soft and gooey. Depending on your dish, this usually takes 15–20 minutes, so keep an eye on them!
Of course! Ice cream, whipped cream, caramel drizzle, or even chopped nuts would make amazing additions. Get creative and make it your own!
