Cotton Candy Cookies that are so easy to make and have the perfect sweet crunch! I never tried the crunch before making these, but I am now a huge fan. It has such a nice texture- not crumbly and not hard like candy. The perfect crunch to offset the soft and chewy cookie.
Preheat oven to 350 degrees and line two cookie sheets with parchment.
In a medium bowl, combine the cake mix, pudding mix, eggs, oil, and flavoring (if desired). I did not use it in mine, but if you’d like to bump up the cotton candy flavor, add it now.
Once mixed, add a couple drops of pink food coloring. Stir until it’s mixed in but not all the way- until it has a marbled look. Add in one drop of blue and repeat.
Using a 1″ cookie scoop (1 tbsp) scoop out the dough and roll it into a ball with your hands. Drop it into a bowl filled with the cotton candy crunch. Push it around the bowl until it’s covered on all sides. Repeat with the remaining dough. Set each scoop 2″ apart on the cookie sheets.
Bake 11 minutes (or until fully baked) and cool completely.
