Nothing beats waking up on Christmas morning to the scent of freshly cooked pancakes. Fluffy stacks of golden pancakes, filled with holiday sprinkles and a drizzle of warm maple syrup, make for a delicious Christmas breakfast tradition. Top them off with a swirl of whipped cream, and you’re set for the perfect winter morning!
In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl or pitcher, mix the egg nog and milk. Pour it into the bowl and then add the eggs, followed by the melted butter.
Fold in the sprinkles.
Heat a griddle to medium heat and add 1 tbsp butter.
Pour or scoop the batter onto the preheated griddle, using approximately 1/2 cup for each pancake. Cook until bubbles appear on the surface, 1 to 2 minutes; flip with a spatula and cook until golden on the other side. Repeat with remaining batter.
Serve with maple syrup, sprinkles, and whipped cream.
