Christmas Morning Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 cups egg nog (or buttermilk, if desired)
  • 1/2 cup milk
  • 3 eggs
  •  cup butter, melted
  • 2 tbsp – 1/3 c sprinkles (plus more for topping)
  • Maple syrup and whipped cream
  • Butter for griddle/frying pancakes

Instructions

  1. In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl or pitcher, mix the egg nog and milk. Pour it into the bowl and then add the eggs, followed by the melted butter.
  3. Fold in the sprinkles.
  4. Heat a griddle to medium heat and add 1 tbsp butter.
  5. Pour or scoop the batter onto the preheated griddle, using approximately 1/2 cup for each pancake. Cook until bubbles appear on the surface, 1 to 2 minutes; flip with a spatula and cook until golden on the other side. Repeat with remaining batter.
  6. Serve with maple syrup, sprinkles, and whipped cream.
