Stars & Stripes Oreo Icebox Cake

This summer, it’s time to celebrate. I teamed up with a talented friend who designed these adorable party invitations (below), and I created recipes to match. This one is called Stars and Stripes Oreo Icebox Cake, and it’s the perfect make-ahead dessert for backyard BBQs, Fourth of July celebrations, and summer parties.
Layers of Oreos and Golden Oreos are paired with a light cream cheese filling, fresh strawberries, blueberries, and strawberry preserves for a cool, creamy dessert that’s as colorful as it is delicious. Since it chills overnight, it’s ready to slice and serve when the party starts, making it one less thing to worry about on a busy day.

Oreo Icebox Cake
Ingredients
For the base
- 16 Oreo cookies
- 16 Golden Oreo cookies
- 1 cup milk
For the filling
- 8 ounces cream cheese,
- softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces whipped topping
For the layers
- 1/2 cup strawberry preserves
- 1 cup diced strawberries
- 1 cup blueberries
For the topping
- Extra whipped topping
- Patriotic sprinkles
Instructions
- Beat the cream cheese, powdered sugar, and vanilla until smooth. Fold in the whipped topping until combined.
- Spread a thin layer of the filling in the bottom of a 9 x 9-inch baking dish.
- Quickly dip the Oreo cookies in milk and arrange them in a 4 x 4 pattern. Top with half of the strawberries, half of the blueberries, and half of the cream cheese filling.
- Quickly dip the Golden Oreo cookies in milk and arrange them in a 4 x 4 pattern over the cream cheese layer. Top with the remaining strawberries, remaining blueberries, and the remaining cream cheese filling.
- Carefully spread the strawberry preserves over the top of the cream cheese layer. Spread a layer of whipped topping over the preserves.
- Cover and refrigerate overnight.
- Before serving, decorate with patriotic sprinkles.
