Pink-o-ween Bat Cookies

Introducing the star of the week: Pink-o-ween Bat Cookies, a fun and DELICIOUS hot pink treat that combines rich dark chocolate, creamy white chocolate, and pink strawberry sandwich cookies. Talk Halloween cuteness. They’re perfect for any Halloween party or a movie marathon with your girlfriends…or Ghoul’s Night Out as they say. If you don’t feel like piping two colors, no problem! Just use pink chocolate and a regular Oreo inside and it’s basically the same color combo. Best part, is that you’re ready for Pink-o-ween.

These pink and dark chocolate bat cookies are such a fun twist on traditional Halloween colors, but they still make the perfect treat imo. To start, you’ll need to melt Ghirardelli white chocolate and tint it with pink candy color, giving it that Pink-o-Ween touch. Carefully pipe the pink chocolate into bat part of the mold. Be sure to do a heavier layer so that the dark chocolate doesn’t show through the pink. After a quick chill in the fridge, the molded chocolate will be ready for the next layer.

Next, melt your dark chocolate, making sure it’s smooth and lump-free. Fill each mold halfway with the dark chocolate before pressing a sandwich cookie into the center. Using a pink or strawberry-flavored cookie adds a fun Ghouls Night twist, but Oreos or any similar cookie can be a perfect swap. Once the cookie is in, pour more dark chocolate on top to completely enclose it. Tap the mold gently on the counter to remove any air bubbles, ensuring a smooth finish before popping it into the fridge again for the chocolate to set.

After letting the cookies to fully firm up in the refrigerator, carefully release them from the mold by applying a bit of pressure on the back. If desired, you can add an extra touch of sparkle by spraying them with glitter dust for an eye-catching shimmer. Be cautious while handling them afterward, as fingerprints can mess up your spray job. Pack the cookies into pink containers for a cute takeaway favor, or just eat them as-is! And serve them at room temperature or else they’ll be too hard to bite through. And that’s it, you’re ready for a Fa-BOO-lous Pink Halloween!

Ingredients

• Ghirardelli White Melting Chocolate
• Pink Chefmaster Candy Color
• Bat Cookie Mold from Spinning Leaf
• Ghirardelli Dark Melting Chocolate
• Sandwich cookies- I used pink/strawberry flavor, but feel free to use Oreos or any variety you like!
• Glitter Dust from Roxy and Rich
• Pink Containers
• For bottles, I love these from Michaels

Instructions

1. In a microwave-safe bowl, melt about 1/2 cup white chocolate melts in 30 second intervals, stirring after each one. Once melted, stir in a couple drops of pink candy color. Tint it to the color of your choice.
2. Pour the chocolate into a bottle with a small tip and pipe the bat inside each mold with pink chocolate.
3. Place the mold in the fridge for 10 minutes.
4. Meanwhile melt the dark chocolate melts. You will need almost the entire bag.
5. Remove the mold from the fridge and fill each mold cavity half way with the dark chocolate.
6. Press a cookie into each mold and then top it off with dark chocolate. Tap lightly on the counter to release any air bubbles.
7. Refrigerate for at least 30 minutes or until they come out of the mold easily.
8. To release the from the mold, flip the mold over a cutting board and lightly press on the back of each cookie. The heat from your finger will help release it. If they’re a bit tricky to get out refrigerate them for another half hour.
9. If you still have issues getting the cookies out, actually press on the back of the mold to “pop” them out. It shouldn’t be an issue if you’re using the Ghirardelli melts and refrigerating them!
10. If desired, spray each cookie with glitter dust. Be careful because once you spray them, finger prints will show. Place a couple cookies in each round tin and serve at room temp!
