I just can’t seem to resist a sugar cookie coated in rainbow sprinkles. This recipe is a super easy go-to favorite that you can whip up at home. Take these to any party, potluck, or friend’s house, and I guarantee they’ll be a hit—one of the first treats to disappear! I love semi-homemade recipes, but this one is so simple to make from scratch, and it’s absolutely worth it. With just a few ingredients and loads of rainbow sprinkles, what could be better than that? When I was in college, my mom and I had a weekend ritual. We’d head to the mall, shop at Papaya, visit Yankee Candle for the 800th time, and treat ourselves to Great American Cookie. I always got a Double Doozie. They’re two giant cookies sandwiched together with more vanilla buttercream than you could imagine. Traditionally, they’re made with chocolate chip cookies, but I always ordered them with sprinkle cookies instead. Yes, they were super sweet, but I could never get enough of them. Meanwhile, my mom always went for the peanut butter cookie cup filled with chocolate frosting (psst, that recipe is in my cookbook, Just Add Sprinkles, coming this March!). These sprinkle cookies would be perfect for recreating a Double Doozie at home—I’d love to try them with chocolate frosting in the center.
