I’m a huge fan of semi-homemade desserts—taking a store-bought favorite and elevating it into something extra special. That’s exactly what I did with these Valentine’s Day Chocolate Chip Cookie Sandwiches!
I make a ton of cookie sandwiches on my blog and social channels, and for good reason—you can never go wrong with cookies and buttercream. For this recipe, I started with Nestlé Toll House Valentine Chocolate Chip Cookie Dough (because convenience is key!), but instead of using store-bought frosting, I made a rich, creamy peanut butter buttercream that takes these cookie sandwiches to the next level.

Valentine’s Day Peanut Butter Cookie Sandwiches
Ingredients
- 1 package (14 oz) Nestlé Toll House Chocolate Chip Cookie Dough with Heart Sprinkles
- 1 stick of salted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup peanut butter
- 2–4 tbsp heavy cream
Instructions
- Bake the cookies according to the package directions. Let them cool completely before assembling.
- Make the peanut butter filling: In a mixing bowl, beat the softened butter until smooth. Add half of the powdered sugar and mix well. Then, add the remaining powdered sugar, vanilla extract, peanut butter, and 2 tbsp of heavy cream. Mix until light and fluffy, adding more cream (1 tbsp at a time) if needed for a smooth, spreadable consistency.
- Assemble the cookie sandwiches:
- Transfer the peanut butter filling to a piping bag with a round tip and pipe a generous dollop onto the flat side of a cookie.
- Top with another cookie, pressing gently to create a sandwich.
- Alternatively, spread the filling with a knife before sandwiching the cookies together.
- Repeat with the remaining cookies and enjoy! If you have any leftover frosting, store it in an airtight container in the fridge until you’re ready to use it.
