I’m a huge fan of semi-homemade desserts—taking a store-bought favorite and elevating it into something extra special. That’s exactly what I did with these Valentine’s Day Chocolate Chip Cookie Sandwiches!
I make a ton of cookie sandwiches on my blog and social channels, and for good reason—you can never go wrong with cookies and buttercream. For this recipe, I started with Nestlé Toll House Valentine Chocolate Chip Cookie Dough (because convenience is key!), but instead of using store-bought frosting, I made a rich, creamy peanut butter buttercream that takes these cookie sandwiches to the next level.
Growing up, my mom and I had a tradition—every mall trip started at Great American Cookie. We always got their famous Double Doozie cookie sandwiches. I’d go for sugar cookies with vanilla frosting, while my mom always chose chocolate chip with peanut butter filling. This recipe is totally inspired by that!
The key to a perfect cookie sandwich? Soft cookies. If they’re too crunchy, the frosting oozes right out. These cookies stay perfectly soft and go perfectly with the melt-in-your-mouth peanut butter buttercream.
While this version is perfect for Valentine’s Day, you can swap the cookies for regular chocolate chip or another seasonal design to enjoy them all year long!
Q: Can I use a different cookie dough?
A: Absolutely! Any soft-baked cookie will work. Try sugar cookies, peanut butter cookies, or even double chocolate chip for a fun twist.
Q: Can I make these ahead of time?
A: Yes! Store them in an airtight container in the fridge for up to 3 days. Just let them come to room temperature before serving.
Q: Can I freeze cookie sandwiches?
A: You sure can! Wrap each one in plastic wrap and store in a freezer bag for up to 2 months.
Q: Can I use store-bought frosting?
A: You could, but trust me—the homemade peanut butter buttercream makes all the difference!
Forget fancy reservations, these Easy Valentine’s Day Chocolate Chip Peanut Butter Cookie Sandwiches are the perfect way to sweeten up a date night at home! Set up a snack station (within reach of the couch lol) with your cookies, extra buttery popcorn, and a few other salty and sweet snacks. Grab some comfy blankets, turn on a favorite movie (or tv series), and get ready for a stress-free night. Feeling extra Pinterest-y? Make a fun drink like hot cocoa with heart marshmallows, loaded milkshakes, or even a dessert cocktail. It’s a calm and delicious way to celebrate, and much more fun than waiting for the check at a crowded restaurant! ❤️🍪✨
