Ingredients

Scale 1x2x3x

• 1 package Betty Crocker Caramel Apple Cookie Mix, plus ingredients listed on the box (or use Betty Crocker Sugar Cookie Mix for a class salted caramel dessert)
• 1/3 cup caramel topping (Ghirardelli recommended for extra richness)
• Coarse sea salt, to taste
• 1/2 cup chopped pecans

Instructions

1. Preheat your oven to 350°F. Line an 8-inch baking dish with parchment paper, then lightly spray with baking spray—this will make them easier to pull out as the caramel will be sticky!
2. Make the cookie dough according to the package instructions. Press about two-thirds of the dough evenly into the bottom of your prepared pan.
3. Pour the caramel topping over the dough layer, spreading it gently. Sprinkle a touch of sea salt over the caramel for that perfect salted caramel flavor.
4. Crumble the remaining dough over the caramel layer, then sprinkle with chopped pecans for an addedcrunch.
5. Bake for 40-45 minutes or until the edges are caramelized and the top is golden brown.
6. Cool and Serve: Allow the bars to cool completely before slicing. Enjoy the rich, gooey goodness!

And the best part? They’re super easy to make, so whether you’re a baking pro or just getting started, these bars are right up your alley. With a handful of ingredients—yes, including that irresistible Ghirardelli caramel topping—this recipe comes together without a fuss. A scatter of crunchy pecans on top balances the gooey caramel and the soft cookie base, creating a texture that’s as dreamy as a Hallmark movie. The mix of caramel and sea salt gives a warm, familiar flavor that’ll have you coming back for seconds… or thirds!

These bars are the ultimate shareable treat. Whip them up for book club, movie night, or just because you’re craving a cozy bite with friends (or hey, keep them all to yourself!). They’re golden-brown, gooey, and oh-so-irresistible—just like the love story they’re inspired by. Grab a cup of coffee, a blanket, and settle in with a plate of these bars, and you’ll feel like you’re right in Love at the Salted Caramel Cafe!

PS- Love at the Salted Caramel Cafe by Angie Ellington is a sweet romance book set in those adorable small towns from Hallmark movies. The story follows, Brenna, who owns a cafe famous for its salted caramel treats. Despite the love she has for her cafe, Brenna needs a little romance of her own 😉 Enter Luke, who’s new to the area and has a mysterious past. He stumbles into her cafe and immediately stirs up her world. As they bond over coffee and caramel treats (OF COURSE), Brenna and Luke must navigate all of their baggage to take a chance on love. It’s a sweet story filled with warmth, romance, and my favorite parr- plenty of salted caramel delights.
