I love making these mini pies, so I decided to dress them out for Valentine’s Day! I used Pillsbury mini crusts and added a strawberry cream cheese filling and topped them with whipped cream and strawberry hearts.
Bake the crusts according to the package directions *mine had a shorter bake time, so be sure to keep an eye on them.
Beat the first 3 ingredients until smooth. Fold in the whipped topping and add in a little pink food coloring if you’d like a brighter shade.
Using a small heart-shaped cookie cutter, cut small hearts out of sliced strawberries.
Pipe the filling into each crust and top with whipped cream and a strawberry heart.
Optional- if you’d like to sweeten the strawberries, sprinkle them with a little bit of sugar and let them sit a bit. You can also spread a thin layer of strawberry jam or preserves on the crust before adding the filling.
They all got eaten the first day!! I think they’d get a bit soggy, BUT perhaps you could make it all and just leave it separate so at least you could be kind of ahead 🙂

Do they get soggy of make ahead for work the next day

How far in advance can you make these and can you refrigerate them
Hi! The crust should be okay a day ahead of time. I wouldn’t fill them until you’re about to serve the pies just in case the strawberries seep a bit.
