These Mini Lemon Cream Layered Pies are a nod to one of my favorite Chick-fil-A throwback desserts. If you remember those little lemon pies they used to serve, this brings that same bright, creamy flavor into a homemade version. They’re fresh, sweet, tangy, and perfectly chilled with a smooth, layered texture. You won’t even miss the original.

These are bright and citrusy with a smooth, creamy finish. The lemon layer is fresh and tangy, balanced by a soft sweetness from the condensed milk. The vanilla cream layer adds a mellow, slightly rich contrast. The graham crust brings a crunchy cookie base, while the whipped cream and crushed Nilla wafers on top add a little extra texture.

The addition of a creamy vanilla layer paired with the lemon filling gives these a soft, balanced flavor instead of a fully tart lemon pie. It rounds everything out and makes each bite feel smoother and more balanced.

Can I use bottled lemon juice instead of fresh?
Fresh gives the best flavor, but bottled works if needed.
Do these need to stay refrigerated?
Yes, they should stay chilled so the layers stay set and creamy.
Can I make these ahead of time?
Yes, they’re perfect for making a few hours ahead or even the day before.
Can I use a different crust?
Yes, vanilla wafer crusts or even shortbread crusts would work well here.
How do I know when they’re done baking?
The centers should be set with a slight jiggle when gently shaken.

Make these, pack one up, and head to a park bench for a little people watching with a friend on a breezy summer day.
