Low Sugar Cranberry Bars
Ingredients
- 1 cup almond flour
- 1/2 cup oat flour
- 1/3 cup monk fruit sweetener
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened almond milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup reduced or low sugar dried cranberries
- 1/4 cup Lilys white chocolate chips
Instructions
- Preheat your oven to 350 degrees and line an 8″ pan with parchment paper and spray with baking spray.
- In a medium bowl, whisk together the apple sauce, almond milk, egg, and vanilla extract.
- In a separate bowl, combine the almond flour, oat flour, monk fruit, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until a batter forms.
- Fold in the cranberries and white chocolate chips.
- Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the bars cool completely in the pan before slicing.
