Okay that’s it…I’ve officially peaked in the marshmallow/cereal bar game. These are really THAT GOOD. First off the cereal is fantastic. My daughter, Hayley, and I did a review and even she went nuts for them. When you add in the marshmallow mixture and white chocolate chips, it takes them to a whole new level. Give them a holiday sprinkle topping (of course) and these will for sure be a hit at your house this holiday season.
Spray a 9″ square dish with cooking spray and line with two pieces of parchment paper criss-crossed. (So that the paper hangs over all 4 sides. It’ll make it easier to pull out.)
In a large pot, melt the butter and marshmallows over medium low heat. Be sure to stir often so that it doesn’t burn.
Once it’s melted, remove the pot from the heat and add in the 6 cups of Gingerbread Toast Crunch. Mix it until it’s completely coated, then stir in 1 cup of white chocolate chips. If they melt a little bit it’s totally fine and expected!
Transfer the mixture to the prepared dish. Using a spoon sprayed with cooking spray OR my personal favorite- a fondant smoother sprayed with cooking spray, lightly flatten the mixture into the pan.
Top with holiday sprinkles and let it cool.
Cut it into bars and enjoy! (They’re so so super good!)
