Ingredients

Scale 1x2x3x

• 1 package of gingerbread cookie mix plus the ingredients listed
• White chocolate for drizzling- I prefer Ghirardelli white melts
• Holiday sprinkles/jimmies

Instructions

1. Preheat the oven to 350 degrees and then line a rimmed baking sheet with parchment paper.
2. Prepare the gingerbread mix according to the package. Spread the dough onto the prepared pan to the desired thickness. Mine was about 1/4” thick. This can get a little tricky so just keep pressing it with your hands OR use a rolling pin or smooth glass.
3. Bake the gingerbread for 15 minutes. Let it cool for about 20-30 minutes and then break it apart into pieces.
4. Place it back into the oven for another 15 minutes. Let it cool completely and ideally sit overnight.
5. Drizzle the gingerbread bark with white chocolate and then add the holiday sprinkles. Once it’s set, it’s ready to serve!

I am going to make a big statement here…this Gingerbread Cookie Bark is the ultimate holiday treat! YES, it is that good. Packed with warm spices, topped with creamy white chocolate, and sprinkled with festive holiday jimmies, this treat brings serious crunch and cheer to any cookie tray. Gingerbread cookies are always popular for Christmas, but this bark brings gingerbread to another level.

Making this bark is a breeze. Start by prepping your gingerbread cookie mix—your kitchen will smell like the holidays in no time! Press the dough into a thin layer on a baking sheet (pro tip: a rolling pin or a smooth glass makes this step a snap). After the first bake, break it into pieces and pop it back in the oven for extra crunch. Once it’s cooled overnight, drizzle on the white chocolate, add a ton of sprinkles, and voila! You’ve got the most delicious gingerbread treat of all time.

This bark makes me want to come up with a whole bunch more. The crispy crunch of the gingerbread is addicting and when you add the sweetness from the white chocolate and sprinkles- mind blowing. I guarantee you, this will be a permanent add on to your Christmas cookie trays.
