  • 3 egg whites, room temp
  • 2 c light corn syrup
  • 1/2 tsp cream of tartar
  • 2 c powdered sugar
  • 1 tbsp vanilla extra
  • 1/4 c unsweetened cocoa powder


  1. In a mixing bowl, add the egg whites, corn syrup, and cream of tartar. Mix on high speed until mixture is double in size. I used a KitchenAid, but you can also use a hand mixer.
  2. Reduce the speed to low and add in powdered sugar, vanilla, and cocoa powder until it’s totally incorporated.
  3. Store in the fridge until using.
