Chicken Tortellini Soup
Ingredients
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 6 cups chicken stock

- 1 package of cheese tortellini, frozen
- 1 tsp dried parsley
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a large pot, heat the olive oil over medium heat. Saute the onion until translucent, about 3-5 minutes. Add the minced garlic and cook for 1 minute more or until fragrant.
- Pour in the chicken broth and then add the dried parsley and garlic powder. Bring to a boil.
- Add the tortellini to the pot and cook according to the package instructions (typically 5-7 minutes).
- Stir in the cooked chicken and let it warm through, about 2 minutes.
- Add salt and pepper and then taste. Adjust the seasonings accordingly.
