Easy Slow Cooker Pot Roast

I have always loved slow cooker dinners, and this is no exception. You put everything into the pot at once and just let it sit! It’s very easy to customize with different gravy mixes, veggies, and spices. Perfect for an easy winter meal.
Easy Slow Cooker Pot Roast
Ingredients

- 1 pound baby potatoes, cut into wedges
- 8 oz baby carrots
- 8 oz sliced mushrooms
- 1 medium yellow onion, cut into 1-inch wedges
- 1 rib celery, thinly sliced
- 3-pound beef chuck roast
- 1 (14.5 oz) can beef broth
- 1 (10 oz) can beef gravy
- 1 (1 oz) packet pot roast slow cooker seasoning mix
Instructions
- Add the potatoes, carrots, mushrooms, onion, and celery to the bottom of your slow cooker. Place the beef chuck roast on top of the vegetables.
- In a small bowl, whisk together the beef broth, gravy, and seasoning mix until smooth. Pour the mixture evenly over the roast and vegetables.
- Cover and cook on low for 8–10 hours, or until the roast is fall-apart tender. If the meat is still tough, switch to high for an additional 1–2 hours.
- Shred or slice the roast, stir everything gently to coat in the gravy, and serve warm.
Optional: Garnish with fresh parsley
