Vanilla Bean Pastry Cream

  • 1 cup milk
  • 2 egg yolks
  • ¼ cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 1 teaspoon vanilla bean paste or vanilla extract

Topping

  • Fresh fruit, such as strawberries, blueberries, raspberries, or kiwi
  • Coarse or sanding sugar for finishing

Instructions

    1. Make the pastry cream- Heat the milk in a small saucepan until steaming but not boiling.
    2. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
    3. Slowly whisk the warm milk into the egg mixture, then pour everything back into the saucepan.
    4. Cook over medium heat, whisking constantly, until the mixture thickens into a smooth cream.
    5. Remove from heat and stir in the butter and vanilla. Let cool completely.
    6. Spoon the cooled pastry cream evenly into the tart shells and smooth the tops.
    7. Arrange fresh berries over the cream, gently pressing them in so they stay in place.
    8. Finish with a light sprinkling of sugar before serving.
