Valentine’s Day Peanut Butter Cookie Sandwiches

  • 1 package (14 oz) Nestlé Toll House Chocolate Chip Cookie Dough with Heart Sprinkles
  • 1 stick of salted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup peanut butter
  • 24 tbsp heavy cream

Instructions

  1. Bake the cookies according to the package directions. Let them cool completely before assembling.
  2. Make the peanut butter filling: In a mixing bowl, beat the softened butter until smooth. Add half of the powdered sugar and mix well. Then, add the remaining powdered sugar, vanilla extract, peanut butter, and 2 tbsp of heavy cream. Mix until light and fluffy, adding more cream (1 tbsp at a time) if needed for a smooth, spreadable consistency.
  3. Assemble the cookie sandwiches:
  4. Transfer the peanut butter filling to a piping bag with a round tip and pipe a generous dollop onto the flat side of a cookie.
  5. Top with another cookie, pressing gently to create a sandwich.
  6. Alternatively, spread the filling with a knife before sandwiching the cookies together.
  7. Repeat with the remaining cookies and enjoy! If you have any leftover frosting, store it in an airtight container in the fridge until you’re ready to use it.
