For the cupcakes:

  • 1 box chocolate fudge cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup whole milk
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup Oreo crumbs
  • 1 cup mini chocolate chips

For the chocolate Oreo buttercream:

  • 1 cup salted butter, softened
  • 3 1/2 cups powdered sugar
  • 3/4 cup cocoa powder
  • 3 to 5 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/4 cups Oreo crumbs

For the topping:

Instructions

  1. Preheat the oven to 325°F. Line two cupcake pans with cupcake liners.
  2. In a large bowl, combine the cake mix, eggs, oil, milk, sour cream, and vanilla extract. Mix until smooth. Fold in the Oreo crumbs and mini chocolate chips.
  3. Fill the cupcake liners about 2/3 full. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  4. Allow the cupcakes to cool completely.
  5. For the buttercream, beat the butter until smooth and fluffy. Gradually add the powdered sugar and cocoa powder. Mix in the vanilla extract and enough heavy cream to reach a smooth, pipeable consistency. Fold in the Oreo crumbs.
  6. Pipe the buttercream onto the cooled cupcakes using a large star tip.
  7. Finish each cupcake with silver edible stars.
