My first cookie sandwiches of the season! They’re called “Tastes Like Fall” and inspired by one of my favorite series, Gilmore Girls. This show had everything, and it’s one of my top 5 of all time. Something about it always gives me autumn vibes. The warmth of Stars Hollow, the endless cups of coffee at Luke’s Diner, and all the festivals that Lorelai and Rory were part of, put me in the mood for the season. These “Tastes Like Fall” cookie sandwiches have a rich spice, creamy filling, hint of espresso, and feel like the perfect tribute to the show. They’re not just cookies; they’re a celebration of everything cozy and nostalgic that makes fall and Gilmore Girls, so special.
Not a pumpkin spice fan? Use yellow cake mix and have a light espresso cream cheese frosting filling instead!
For an extra bump of sweetness, add white chocolate chips into the cookie batter!
To give these cookies a little more Fall flair, add sprinkles to the dough, right before putting them in the oven. Festive jimmies or leaf-shaped sprinkles would be best!

There’s something magical about the first bite of a homemade treat, especially if it’s just as comforting as the flavors of Fall. I couldn’t think of a name for these cookies, but then Gilmore Girls popped into my head. I always associate that show with Fall, especially a Year in the Life. As I made these cookie sandwiches, I couldn’t help but think of all the times Lorelai and Rory shared their love for sweets, caffeine, and all things seasonal over a cup of coffee at Luke’s Diner. I truly couldn’t love that show any more.
These cookies taste AND smell just like Fall. They have a rich spice base, velvety cream cheese filling, and a hint of espresso…feels like the perfect treat to binge Gilmore Girls this season. The town of Stars Hollow was always buzzing with energy, much like Lorelai’s caffeine buzz. If there’s one thing she would approve of, it’s adding a shot of espresso to the cookie sandwiches. Imagine the Lorelai and Rory, seated at Luke’s, biting into one of these cookie sandwiches while planning their next adventure or discussing the latest town festival.
As I mixed the cookie/cake batter, I could almost hear Sookie’s voice in the kitchen, excitedly experimenting with new Fall flavors. She would undoubtedly appreciate the simplicity of using a boxed spice cake mix, but would also insist on the importance of adding that extra teaspoon of pumpkin pie spice. After all, it’s that extra dash of something special that turns an ordinary treat into a truly memorable one. In the Gilmore fashion, I wanted a little something extra special mixed in.
When it came time to make the frosting, the addition of coffee was a must. I imagined Lorelai insisting that strong coffee flavor was key—because, let’s be honest, if a dessert doesn’t have caffeine, is it even worth it? The smooth cream cheese, combined with the hint of espresso, creates a perfect contrast…kinda like Luke and Lorelai, wink wink.
These “Tastes Like Fall” cookie sandwiches are no different than the entire vibe of Gilmore Girls itself. They’re a sweet invitation to slow down, savor the moment, and perhaps share a bit of Stars Hollow magic with someone special.
I’m such a huge fan of these…they’re my first cookie sandwiches of Fall, but also filled with my favorites. So channel your inner Rory and grab a good book, or how about your inner Lorelai and take one to go, coffee in hand, ready to tackle whatever craziness the inn had in store.
