For the bars

  • 1 box yellow or white cake mix
  • 2 eggs
  • ½ cup oil
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • ¼ cup sour cream
  • ½ cup sprinkles

For the lemon cream center

  • 4 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract

For the sprinkle layer

  • 2 to 3 tablespoons pink sprinkles

For the glaze

  • ¾ cup powdered sugar
  • 1 to 2 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8×8 pan with parchment paper.
  2. In a large bowl, mix cake mix, eggs, oil, vanilla extract, lemon zest, lemon juice, and sour cream until a thick dough forms.
  3. Fold in the sprinkles.
  4. In a separate bowl, mix cream cheese, sugar, lemon juice, and vanilla until smooth and creamy.
  5. Press half of the dough evenly into the prepared pan.
  6. Sprinkle 2 to 3 tablespoons of sprinkles over the base.
  7. Gently spread the lemon cream mixture over the dough.
  8. Drop the remaining dough over the top in small pieces and lightly press so it partially covers the filling.
  9. Bake for 25 to 30 minutes, until set and lightly golden.
  10. Cool completely before slicing.
  11. Whisk the glaze ingredients until smooth and drizzle over the bars.
  12. Finish with extra sprinkles for a little fun.
