S’mOREO Brownie Icebox Bars

- 1 box brownie mix + ingredients listed
- 1 package S’mOREOs, chopped
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 cup marshmallow fluff
- 1/2 cup chocolate chips
- Optional: mini marshmallows, mini chocolate chips
Instructions
- Preheat the oven according to the brownie mix directions and line a 9×9 pan with parchment paper. Spray with baking spray for easy removal.
- Chop the S’mOREOs into chunks. Fold about 3/4 of them into the brownie batter.
- Pour the batter into the pan and bake as directed. Let cool completely.
- In a bowl, whip the heavy cream and powdered sugar until soft peaks form. Fold in the marshmallow fluff until smooth and light.
- Spread the marshmallow cream evenly over the cooled brownie layer.
- Melt the chocolate chips until smooth, then gently drizzle over the marshmallow layer.
- Sprinkle the remaining chopped S’mOREOs over the top and add mini marshmallows or mini chocolate chips if using.
- Refrigerate for 2–3 hours until set, then slice into bars and serve chilled.
