I love a good cookie cake…that’s an understatement. Cookie Cake is by far one of the most irresistible desserts for me. I’ve gotta say this cookie cake is next level. It totally gives the feeling of fall at an apple orchard. The combo of buttery richness, tart apples, salty sweet toppings, and a creamy buttercream border is autumn baking at its finest. So grab a cup of cider or tea and read along with me!
The base of the cake features fall flavors, like apple pie spice and finely chopped apples, and then I throw in creamy white chocolate chips for extra sweetness. It bakes in an 8” round pan until it has just the right amount of golden-brown crispness along the edges.
What sets this dessert apart is the creamy apple pie-spiced buttercream. Made with butter, powdered sugar, and a hint of apple pie spice, it’s the perfect extra special touch. This frosting is piped around the edges, but feel free to spread it on the entire cake! All the frosting lovers out there will thank you.
For an extra fall-inspired touch, caramel sauce is generously drizzled over the top. To balance the caramel, I sprinkled coarse sea salt which really brings out all of the flavors. If you’re feeling extra festive, add some Fall leaf sprinkles for a little color.
