Cookie sandwiches are one of my all-time favorite desserts. These are a combo of red velvet cake mix cookies and Oreo cream cheese buttercream. They are truly out of this world, and I love the flavor combo.

I used cream cheese chips, but white chocolate chips would be great too
I was given this cake mix cookie recipe over 15 years ago and still make it regularly
I am extremely picky about cream cheese frosting…it can’t be too sweet or too tart and this one is just right to me
If you don’t love the chocolate Oreo flavor, use golden Oreos or just make the regular cream cheese frosting recipe without any cookies
The reason I refrigerate this dough is that sometimes they spread more than I’d like- the key is refrigerating them just a bit AND using a small cookie scoop
The cookies don’t need to be overly hard or sturdy, just baked enough so they don’t break apart. I love soft cookies for cookie sandwiches
1/2 c cream cheese baking chips (or white chocolate)
8 oz cream cheese, softened
1/4 c butter, softened
1 box (3 1/2 c) powdered sugar
1 tsp vanilla
1/2 c crushed Oreos
Instructions
In a mixing bowl, combine the cake mix, eggs, and vegetable oil. Fold in the cream cheese chips. Cover and refrigerate for at least a half hour.
Preheat oven to 350. Line two cookie sheets with parchment paper. Using a small cookie scoop, add the cookie dough to the sheets about 2″ apart. Bake for 12-16 minutes. Be sure to bake these all the way since they’re a softer cookie. Let them cool completely.
To make the buttercream, beat the cream cheese and butter until smooth. Add in the powdered sugar and vanilla and mix. Add in the Oreos and mix until fully combined.
Flip one cookie over and pipe or spread frosting on the cookie, covering the entire thing. Add a second cookie to the top. Repeat with remaining cookies.
***If you don’t like a lot of frosting in your cookie sandwiches, cut the frosting recipe in half.
