These are the happiest cake mix cookie sandwiches of all time. They start with a classic chocolate chip cookie made from a boxed cake mix. Each sandwich is filled with a sprinkle buttercream and then rolled in rainbow sprinkles for extra crunch. Forget the cookies at the mall, these will be your new favorite treat!
In a medium bowl, combine the cake mix, oil, and eggs. Fold in the chocolate chips and refrigerate for at least a half hour.
Preheat the oven to 350 degrees. Line cookie sheets with parchment paper. Using a small cookie scoop (about tbsp-size), add the dough to the sheets about 2” apart. Bake for 9-11 minutes or until very lightly golden brown. Do not overtake since this should be a softer cookie for the sandwich. Let the cookies cool completely.
In a medium bowl, beat the butter until smooth. Add in the powdered sugar, cream, and vanilla and mix. Fold in the nonpareils.
Using a piping bag with an open tip (or just spread with a knife), add the frosting to one cookie and top it with another. Be sure that both “bottoms” of the cookie are facing the frosting.
Repeat with the remaining cookies. If desired, roll them in extra rainbow sprinkles and serve.
