PLOT TWIST…I live in Florida and eh, that is like 2 days in November. But I still love to celebrate with tons of seasonal flavored desserts. Cookie skillets have been a huge part of my baking and recipes this year, so I’m excited to share a new recipe: the Pumpkin Patch Cookie Skillet. It’s a mix of warm, gooey cookies, sweet caramel, and crunchy glazed pecans—perfect for cozy fall evenings with family or friends. Or pretend Fall evenings with the air conditioning turned down really low.
Creating the Pumpkin Patch Cookie Skillet is a breeze, yet the results are nothing short of spectacular. The base of this recipe starts with a package of Sweet Loren’s Pumpkin Spice Cookie Dough, which I bring to room temperature so that it’s much easier to press into the skillet. This dough smells so good and it’s truly fall in cookie form. To add an extra layer of pumpkin pizazz, I use Pillsbury Ready to Bake! Pumpkin Sugar Cookie Dough. The discs of dough are pressed lightly on top and bakes seamlessly into the pumpkin cookies.
To start, preheat your oven to 350 degrees and prepare a 9-inch skillet by spraying it with cooking spray. Press the room-temperature pumpkin spice cookie dough into the bottom of the skillet, forming an even layer. Then, carefully arrange the pumpkin sugar cookie discs on top. Remember to press them lightly; this helps them bake together while still allowing each dough to retain its unique characteristics. After baking for about 17-19 minutes, the skillet cookie should be lightly golden with a slightly underbaked center—just the way I like it. The edges will be perfectly set, so there’s something for everyone. I know…most people go for the gooey center, but I love the crispy edges.
Once out of the oven, the real fun begins. While the cookie is still warm, top it with generous scoops of creamy vanilla ice cream. The heat from the cookie will cause the ice cream to melt slightly, creating a luscious, velvety layer over the warm cookie. Next, drizzle salted caramel or caramel syrup over the top for a sweet, buttery contrast. To finish, sprinkle on some Emerald Glazed Pecans for a satisfying crunch and a hint of nutty greatness.
For those who prefer a cold treat, this skillet cookie is just as delicious when served at room temperature. Simply allow the cookie to cool completely in the skillet before adding your toppings. The cooled cookie offers a different but still-super-amazing dessert experience. The texture of the cookie is firm, but chewy!
