Pink Bat Oreo Cookies

  1. In a microwave-safe bowl, melt about 1/2 cup white chocolate melts in 30 second intervals, stirring after each one. Once melted, stir in a couple drops of pink candy color. Tint it to the color of your choice.
  2. Pour the chocolate into a bottle with a small tip and pipe the bat inside each mold with pink chocolate.
  3. Place the mold in the fridge for 10 minutes.
  4. Meanwhile melt the dark chocolate melts. You will need almost the entire bag.
  5. Remove the mold from the fridge and fill each mold cavity half way with the dark chocolate.
  6. Press a cookie into each mold and then top it off with dark chocolate. Tap lightly on the counter to release any air bubbles.
  7. Refrigerate for at least 30 minutes or until they come out of the mold easily.
  8. To release the from the mold, flip the mold over a cutting board and lightly press on the back of each cookie. The heat from your finger will help release it. If they’re a bit tricky to get out refrigerate them for another half hour.
  9. If you still have issues getting the cookies out, actually press on the back of the mold to “pop” them out. It shouldn’t be an issue if you’re using the Ghirardelli melts and refrigerating them!
  10. If desired, spray each cookie with glitter dust. Be careful because once you spray them, finger prints will show. Place a couple cookies in each round tin and serve at room temp!
