Pina Colada Ice Cream Cookie Sandwich

Ingredients

  • 1 box of yellow cake mix
  • 1/2 c vegetable oil
  • 2 eggs
  • 1/2 tsp coconut extract
  • Shredded coconut, optional
  • Pina Colada Ice Cream

Instructions

  1. Preheat oven to 350 degrees and line 2 baking sheets with parchment.
  2. In a bowl combine the cake mix, oil, eggs, and extract. Using a small cookie scoop, place scoops of the dough onto each baking sheet, spacing them 2″ apart. This will make 14 cookies (7 cookie sandwiches). If desired, top with shredded coconut.
  3. Bake for 11-13 minutes and then let cool completely. They should be soft which is ideal for an ice cream sandwich.
  4. Once cool, use the ice cream scoop, and place a round of each onto half of the cookies. Top with the other half and eat immediately or freeze.
