These cookies have my favorite combo- a vanilla cookie base and chocolate fudge filling. Whenever we go to parties, I get asked if I want a vanilla cupcake or chocolate. I would actually choose a chocolate cupcake with vanilla frosting or a vanilla cupcake with chocolate! I like to mix and match rather than choose one flavor.
These cookies have a Party Chip cake mix base, and they’re super simple to make. The inside is filled with the most amazing fudge buttercream that you’ll want to use on all of your desserts. Finish them off by rolling them in rainbow sprinkles and you’re set!
Preheat the oven to 350 and line cookie sheets with parchment paper.
In a medium bowl, combine the cake mix, eggs, and vegetable oil. If it’s really warm or humid out, refrigerate the dough for about 15 minutes.
Using a small cookie scoop (about 1 tbsp size), add dollops of dough to the prepared sheets. Bake for approximately 10-12 minutes. Be sure not to over bake so that the cookies stay soft. Let the cookies cool completely.
In a mixing bowl, beat the butter until smooth. Add in half of the powdered sugar and mix. Add in the rest of the sugar, Nutella, cocoa, and cream. Mix until smooth. Add extra heavy cream 1 tbsp at a time if it’s too thick.
Add a layer of buttercream to one cookie, making sure to flip it over and top it with another. Roll in rainbow sprinkles, if desired. Repeat with the remaining cookies. There should be 11 cookie sandwiches total.
