Mint Oreo Ganache Brownies

  • 1 box brownie mix (plus ingredients listed on the box)
  • 1 package Mint Oreo Thins
  • 1/2 cup heavy cream
  • 1/2 cup dark or semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and line an 8” square pan with parchment paper.
  2. Lightly coat with baking spray. Prepare the brownie batter according to the package instructions, then pour it into the prepared pan.
  3. Press 16 Mint Oreo Thins evenly across the top of the batter.
  4. Bake for 30–35 minutes or until set. Let the brownies cool completely before topping.
  5. To make the ganache: Heat the heavy cream in a microwave-safe bowl for 1 to 1½ minutes, until very hot but not boiling. Add the chocolate chips, let sit for 1 minute, then whisk until smooth and glossy.
  6. Pour the ganache over the cooled brownies and spread evenly.
  7. Top with crushed Mint Oreo Thins.
  8. Refrigerate for at least 30 minutes to set. Let the brownies come to room temperature before slicing and serving.
