These Lemon Oreo Cake Cookie Sandwiches are inspired by a Sesame Street favorite, Big Bird! I decided to do a mini back to school series based off of Sesame Street characters. I wasn’t sure how to capture Big Bird’s vibe, so I went with the stripes on his legs. I loved them so so much, and they were also incredibly delicious! They have a yellow cake base and they’re fixed with a lemon Oreo buttercream. So good and very kid friendly.
Wanna skip the Big Bird theme? They’d be great as a party cake cookie sandwich. Skip the drizzle and add sprinkles to the cake batter. Instead of lemon Oreos just use golden.

As the school year begins, there’s something truly special about ending the summer with a treat that reminds them of their favorite childhood characters. These Big Bird-inspired cookie sandwiches bring the magic of Sesame Street straight into your kitchen. With bright, cheerful colors and a soft, sweet texture, these cookies are sure to brighten up your last days of summer or first week of school season! Not only are they easy to make, but they’re my newest mini series of cookie sandwiches which makes me DOUBLE excited.
The base of these delightful cookie sandwiches starts with a simple yellow cake mix. I love using cake mix for cookie sandwiches. It not only saves time but also makes sure that the cookies have a soft, cakey texture that’s perfect for sandwiching. If they’re too hard the buttercream just smushes right out! To get started, preheat your oven to 350 degrees and line your baking sheets with parchment paper. I absolutely LOVE the precut parchment paper like this kind. In a medium bowl, combine the cake mix, vegetable oil, and eggs, mixing until a dough forms. Using a small 1” cookie scoop, place dollops of dough on the cookie sheets about 2 inches apart. Bake for 9-11 minutes, or until the cookies are set and lightly golden brown. The key here is to avoid overbaking, as you want the cookies to remain soft enough to pair well with the frosting.
Once your cookies are out of the oven and cooling on wire racks, it’s time to prepare the frosting. This isn’t just any frosting—it’s a creamy, buttery mix with a fun twist. Begin by beating a stick of salted butter until it’s smooth and fluffy. Gradually add in the powdered sugar, vanilla, and heavy cream, mixing until everything is well combined. The crushed lemon or golden Oreos are the secret ingredient, adding a bit of crunch and a hint of citrusy-sweet flavor that totally accents sweetness of the cookies. If your frosting is too thick, don’t hesitate to add a bit more heavy cream, one tablespoon at a time, until you reach the desired consistency.
Now, for the fun part—decorating! These cookie sandwiches are inspired by Big Bird, so naturally, they need a touch of his style…I went with his legs as an inspiration. I’m not sure I ever noticed the colors/stripes before this project! While your cookies are cooling, melt some red and pink candy melts in the microwave in 30 second intervals, stirring between each. Once melted, drizzle the candy melts over the top of each cookie in thin lines to mimic Big Bird’s legs. This playful touch not only adds a pop of color but also ties the whole theme together. To assemble the cookie sandwiches, fill a piping bag with the frosting and use a rounded tip to pipe a generous layer onto the bottom of one cookie. If you don’t have a piping bag, a simple knife will do the trick. Top the frosted cookie with another cookie to create a sandwich, pressing gently to ensure the frosting spreads evenly between the cookies. Repeat this process with the remaining cookies, and before you know it, you’ll have a batch of bright, cheerful Big Bird-inspired cookie sandwiches!
