Lemon Kit Kat Blondies

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cornstarch
  • 1 1/2 sticks of butter, unsalted
  • 1 cup of granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 1 cup chopped Lemon Kit Kats

Instructions

  1. Preheat the oven to 350 degrees. Spray a 9″ pan with baking spray. Add parchment paper as well so that it’s easier to take it out of the pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. 
  3. In another bowl, beat the butter and sugar until light and fluffy. Use a stand mixer with a paddle attachment or a hand mixer. 
  4. Add the vanilla and then the eggs one at a time and beat until incorporated. 
  5. Mix in the dry ingredients and beat until just combined. 
  6. Fold in the Kit Kats. The Kit Kats will wind up having a chewy texture rather than crunchy with a light lemon flavor. Press the batter into the prepared pan. 
  7. Bake for 25-30 minutes or until golden brown. Let them cool completely and then refrigerate for at least an hour. *Putting brownies or blondies in the fridge will give them a chewier/fudgier texture. 
  8. Remove from the fridge and cut into bars. Eat right away or wait until they’re room temp.
