Sprinkle cookie sandwiches are perfect for Halloween fun, and BONUS, they’re super easy to make! They start with a easy cake mix cookie base that’s covered in Halloween nonpareils, adding a crunchy and colorful touch. Sandwiched in the middle is a dual-tone swirl of orange and black frosting, making each bite a spooky treat.
Funfetti Black frosting (omit if you can’t find it or don’t want to use black)
1 stick of butter
2 cups powdered sugar
1/2 tsp vanilla
1–2 tbsp heavy cream
orange food coloring
Instructions
In a medium bowl, combine the cake mix, eggs, and oil. Refrigerate for at least 30 minutes.
Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
Using a small cookie scoop (or about 1 heaping tbsp of dough) add scoops of the dough into a bowl of nonpareils, making sure to cover them on all sides. *Note these cookies are crunchy on the outside and chewy on the inside!- if you want less crunch only add a little bit of nonpareils.
Arrange the scoops onto the prepared baking sheets about 2″ apart. Bake for 11 minutes or until lightly golden and let them cool completely.
Meanwhile, prepare the orange frosting. Beat the butter until smooth. Add in the powdered sugar, vanilla, cream, and orange food coloring. Mix until fully combined. *Note if you’re only using orange frosting you should double the recipe.
Place the black frosting and orange frosting into two separate piping bags. Cut a small hole at the bottom of each so you can pipe the frosting.
Flip half of the cooled cookies over and pipe a black circle of frosting into the center of half of the cookies. Add an orange swirl around the black, creating a “bullseye” effect. Add a second cookie on top to create a sandwich.
