I’m a huge fan of Funfetti, and I love that they come out with seasonal varieties of their mixes. So of course, I had to make Halloween Funfetti Cookie Sandwiches. Inspired by Casper, I added a cute ghost marshmallow to each cookie at the end, and I couldn’t be happier with the result. Two cookies sandwiched together with rich chocolate frosting? Heck yeah. This is definitely the perfect way to wrap up my Halloween cookie sandwich flavors this year.

So, funny story—I’m not sure if I’ve completely forgotten the Casper movie or if I just never saw it as a kid. I remember the cartoon, which I think was a spin-off, so maybe that’s what I’m remembering. Either way, I decided to watch the live-action movie while making these cookies, and I had no idea Devon Sawa played Casper as a human! A little weird, but hey, a lot of 90s movies were like that, right?
These cookies have the classic sweet Funfetti flavor, which I balanced with a rich chocolate frosting. The ghost marshmallows add a fun and gooey texture, but make sure not to bake them too long, or they’ll melt and spread much more than you’d like! Just add them in the last couple of minutes for the perfect finish.
The best thing about cookie sandwiches is that they’re so satisfying. One is usually enough to hit the spot, and you can adjust the amount of filling to suit your taste. I’m a big frosting fan, but if you’re not, you can go light on the filling and still get the perfect combo of flavors.
It’s almost October, so it’s time to break out the Halloween movies! I highly recommend making one of these cookie sandwiches from the past month. It’s the perfect treat for a spooky movie night.
