Ingredients

  • 1 box of white cake mix + the ingredients listed on the box
  • Green and yellow food coloring (to make lime green)
  • 1 cup marshmallow fluff
  • 2 tbsp crushed candy canes
  • 2 sticks of butter, 1 use one salted and one unsalted
  • 4 cups powdered sugar
  • 34 tbsp heavy cream
  • Vanilla extract
  • Grinch decorations- sprinkles, eyes, and toppers are from Sprinkle Pop

Instructions

  1. Preheat oven to 350 degrees and add liners to a cupcake pan. I used red foil liners.
  2. In a bowl, combine the cake mix + the ingredients listed on the box. Add in the food coloring to make the desired shade of green.
  3. Bake according to the package directions and let them cool completely.
  4. In a small bowl, combine the marshmallow fluff and crushed candy cane pieces.
  5. Using a cupcake corer, remove the center of each cupcake. I use one similar to this. Fill each hole with the marshmallow fluff and replace the missing piece of the cupcake.
  6. In a mixing bowl, beat the butter until smooth. Add in half of the powdered sugar and mix. Add in the cream, vanilla, and rest of the sugar and mix.
  7. Divide the frosting into two parts. Add the plain white frosting to a piping bag fitted with a 1M tip.
  8. Pipe a swirl of frosting onto half of the cupcakes. Top with Grinch sprinkles and edible wafer decorations.
  9. For the other half, add food coloring to the vanilla frosting to make it “Grinch Green.” Using a round tip, pipe a circular swirl onto each cupcake. I did three round swirls high. Add an edible Santa hat and two Grinch eyes.
  10. Serve or store in the fridge and then serve at room temp. *Note, if you are storing them in the fridge, keep in mind the wafer paper toppers may not stay straight up so it’s best to add them when serving.
