I absolutely love brownie cupcakes, maybe even more than regular square brownies. I like how they have a bit more crunch at the top and the inside is able to be filled. I chose Biscoff cookie butter for these because it has a lighter flavor. It makes the center sweeter without over powering the brownie. I gave them a little powdered sugar dust topping and that’s all they really need. They’re incredible as-is!
Since the Biscoff gives this more of a subtle taste, if you wanted more of a contrasting flavor, I would highly recommend peanut butter. Top them with drizzled peanut butter and some mini chocolate chips, and they would be incredible.
If you’re looking for an all-chocolate option, use Nutella instead of Biscoff. It’ll still have a creamy center but it will be a double dose of chocolate flavor.
I added powdered sugar to mine, but I’d also love melted Biscoff and a sprinkling of crushed cookies.
