Easy Weeknight Skillet- Turkey and Rice!

Ingredients

  • 1 pkg ground turkey breast, cooked and crumbled
  • 2 eggs, lightly beaten
  • 1/2 of an onion, chopped
  • 1 can of peas and carrots
  • 1 pkg ready to serve whole grain brown rice
  • 1/3 c low sodium soy sauce
  • 2 tbsp teriyaki sauce
  • Chopped green onions and sriracha if desired

Instructions

  1. Cook the ground turkey until no longer pink and set aside. This can be done the night before.
  2. Pour the eggs into a preheated pan and cook until scrambled. Remove from the pan and set aside.
  3. Add the chopped onion to the pan and sauté about 5 minutes or until lightly browned.
  4. Add in the peas and carrots, rice, ground turkey, and soy sauce. Stir until combined.
  5. Add the egg back to the pan and then the 2 tbsp of teriyaki sauce.
  6. Let it simmer on low heat for 10 minutes.
  7. Top with green onions and sriracha if desired and serve!
