Cosmic Brownie Ice Cream Bars

- 1 package edible sugar cookie dough- be sure it says Safe to Eat Raw like this one
- Rainbow sprinkles/jimmies
- 1 pint vanilla ice cream, softened but not melted
- 1 package Cosmic Brownies (16 brownies needed)
Instructions
- Line an 8-inch square baking dish with parchment paper, leaving a little overhang on the sides. Spray very lightly with nonstick spray.
- Press the sugar cookie dough evenly into the bottom of the pan.
- Spread the softened vanilla ice cream over the cookie dough in an even layer.
- Sprinkle rainbow jimmies over the ice cream.
- Arrange the Cosmic Brownies on top in a 4 x 4 pattern, gently pressing them into the ice cream.
- Freeze until completely firm.
- Use the parchment paper to lift the dessert from the pan. Cut into squares, using each Cosmic Brownie as your guide.
- Let the bars sit at room temperature for a few minutes before serving so the brownie and cookie dough soften enough to easily bite through.
