Ingredients

  • 1¼ cups quick-cooking oats
  • ½ cup peanut butter or nut butter of choice (I used no-sugar-added peanut butter)
  • ⅓ cup maple syrup (sugar-free if preferred)
  • 1 tablespoon brown sugar substitute (like Splenda Magic Baker)
  • ¼ cup raisins
  • 1 teaspoon vanilla bean paste or vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, mix all ingredients until well combined.
  3. Use a small cookie scoop (about 1 tablespoon) to portion the mixture, then roll into balls and place on the prepared sheet.
  4. Refrigerate for 30 minutes or until firm.
  5. Store in an airtight container in the fridge.
