Chicken Tortellini Soup

Ingredients

  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 6 cups chicken stock
  • 2 cups cooked chicken chopped, ideally rotisserie
  • 1 package of cheese tortellini, frozen
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Saute the onion until translucent, about 3-5 minutes. Add the minced garlic and cook for 1 minute more or until fragrant.
  2. Pour in the chicken broth and then add the dried parsley and garlic powder. Bring to a boil.
  3. Add the tortellini to the pot and cook according to the package instructions (typically 5-7 minutes).
  4. Stir in the cooked chicken and let it warm through, about 2 minutes.
  5. Add salt and pepper and then taste. Adjust the seasonings accordingly.
