In a large pot, heat the olive oil over medium heat. Saute the onion until translucent, about 3-5 minutes. Add the minced garlic and cook for 1 minute more or until fragrant.
Pour in the chicken broth and then add the dried parsley and garlic powder. Bring to a boil.
Add the tortellini to the pot and cook according to the package instructions (typically 5-7 minutes).
Stir in the cooked chicken and let it warm through, about 2 minutes.
Add salt and pepper and then taste. Adjust the seasonings accordingly.
