  • 1/2 cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the melted butter, mashed bananas, sugar, eggs, vanilla, and lemon juice until smooth.
  3. Add the flour, baking soda, and salt. Stir just until combined. Be careful not to overmix.
  4. Gently fold in the blueberries.
  5. Spread the batter into the prepared loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing.
